Ice creams with cyclodextrin

In these days people throughout the word suffer from heat waves threatening their health. Heat stress is the leading cause of weather-related deaths and can exacerbate underlying illnesses including cardiovascular disease, diabetes, mental health, asthma, and can increase the risk of accidents and transmission of some infectious diseases. Heatstroke is a medical emergency with a high-case fatality rate (WHO, 2024).

One of the most important actions to avoid negative health effects is keeping the body cool and hydrated. In addition to drinking water regularly (at least 2–3 litres per day) ice creams could also help.

Alpha-cyclodextrin is an often used ingredient of ice creams as plant fiber/vegetable fiber, aroma stabilizer and emulsifier (CDNews, 2019 and 2022).

A recent work aimed at the optimisation of a blend of natural ingredients (i.e., citrus fibres – CF, α-cyclodextrin – ACD, and whey protein concentrate – WPP) to be used as substitute of mono- and di-glycerides of fatty acids (MDG) in clean-label ice cream (Loffredy and Alamprese 2023). (Clean label means making a product using as few ingredients as possible). Using an emulsifier mixture composed of 1.1 g/100 g ACD, 1.75 g/100 g WPP, and 0.16 g/100 g CF in ice cream gave a product with characteristics similar to the reference product or even better, thus demonstrating the possibility to produce a high-quality clean-label ice cream.

Adding β-cyclodextrin and cinnamon oil to goat’s milk-based ice cream reduced the characteristic goat taste ( Alosily et al. 2023)
