The application of CDs in food has been the topic of several review papers. This study with 125 references emphasizes the health effects. For example, CDs could encapsulate phospholipids and food components, potentially improving or preventing metabolic diseases such as cardiovascular diseases, diabetes, and neurological disorders by blocking the absorption of carbohydrates, fats, and cholesterol. This review seeks to investigate the clinical effects and mechanisms of action considering all their potential properties and their relevance to health by utilizing in vivo, in vitro, animal, and human studies.
